Minnie Mouse Inspired Cake

 Minnie Mouse inspired cakes are always a big hit for a little girl's first birthday, and this one was super easy to make.

 I used cutters and molds for just about everything.  I used black Fondarific fondant for the black accents.  I used a Wilton Mickey Mouse cutter for the ears.  A Wilton Decorative Pie Crust Impression Mat for the border, and a silicone mold for the mini bows.  The alligator texture on the fondant covering the cake drum was made with a silicone impression mat.  I used an Anne Clark cookie cutter for the number "1".  The only thing I made free hand was the large bow on top, and that came out a little wonky looking for my taste.  LOL.


For the Walt style lettering on the cake I actually made those cutters myself using my new toy - a Creality 3D printer.  Here is the "R".  How cool is that!

How To Make Your Own Cookie Cutters with a 3D Printer

So you want to try the newest trend in cake & cookie decorating and make your own cookie cutters?  Well so do I!  How about we learn all this stuff together....

Here is the first set of 3D cookies cutters I made.  Can you guess who they are???  The Sanderson Sisters - I smell children.

It was really, really easy making these cutters.  After setting up my 3D printer it took about 10 minutes to go from a sketch... 

to the cutters forming on the bed of my 3D printer...  

It took FOREVER for the things to actually print, but after about 7 hours of waiting, I finally had my first set of cookie cutters.  It was like magic.


Update: 2/19/2021 - I've also been making fancy letter embossers using my 3D printer.  How cool is that!



Update: 2/28/2021 - This printer has become my most useful cake decorating tool.  In just a few hours I made all the fondant/gum paste cutter used on this cake.  I even made the letters for the name on the side of the cake and a tiny dinosaur foot embosser to make tiny foot prints in the fondant covering the cake drum.

Update: 3/13/2021 - Last one I promise -- Harry Potter cutters: envelope, wings for golden snitch, and shield with embossers for the 4 houses.  Oh how I love my 3D printer...

So how is all of this accomplished??    In a nutshell there were 3 steps to the process: 

  1. CLIP-ART was sent to 3D MODELING SOFTWARE (Cookiecad.com in this case).   I just told the app how large I wanted the cutter to be, and Cookiecad generated a .STL file which I then downloaded to my computer.   (An STL file describes the 3D geometry of your cookie cutter.)
  2. The .STL file was loaded into SLICER SOFTWARE which generated a .GCODE file.  (GCODE tells the 3D printer what to do.)  
  3. The .GCODE file was transferred to the 3D PRINTER (via a micro SD card) and the printing of the cookie cutter began.

Simple right?  Well maybe not.

Lets look at the process in a little more depth.  I'm a list type of person so lets make a list of all the things you will need to go from a simple sketch to a fully formed plastic cookie cutter.

You will need:

  • 3D printer  - The most popular FDM 3D printers for hobbyist include Creality and Prusa.  (A larger list of common brands can be found below.) The most important thing to consider when buying a printer is SIZE:  size of the nozzle, the size of the bed, the size of the Z-axis.  SIZE really does matter!  
  • Filament  - Filament is a thin string of plastic that is melted and extruded from the nozzle of the FDM 3D printer to form the cookie cutter.  Filament comes is different types, sizes, colors, brands, and food safety.  PLA 1.75mm is the most common filament used to make cutters.  See detailed filament descriptions below.  
  • Design Software - This software is used to digitally design your cutter.  When you're first learning you can skip this step and just use clip art you find on the web.  
  • 3D Modeling Software - This software will convert your line drawing/clip art into a 3D model.  The model is saved to a file in the "STL" format.  The biggest names in 3D modeling software are Fusion 360 and TinkerCad. 
  • Slicer Software - The Slicer software reads the STL file and slices your 3D model into thousands of thin horizontal planes.  The "slices" are then packaged with other printer specific information and saved to a .GCODE file.  A GCODE file is specific to a brand/model of printer and is not interchangeable between printers.  The most popular Slicer software is Cura.  More info on Slicer software is below. 
  • Slicer Profile - There are literately hundreds of  parameters that can be adjusted in the Slicer software.  These parameters will need to be tweaked based on your 3D printer, your brand of filament, and the weather (not joking).  There are a bunch of really tech savvy gurus on YouTube that have taken pity on us newbies and put together profiles for every printer and slicer combination.  Just search YouTube for you printer brand and the slicer you are using to get a fool-proof profile.  Thank you CHEP!
So when you first start out on this journey of 3D printing your own cookie cutters the only things you have to buy upfront are the 3D printer and some filament.  There are free versions of all the various software components, but of course the more sophisticated you get with your 3D printing requirements the more sophisticated (and expensive) the software will get. 

So the biggie, of course, is the 3D printer.  3D Printer prices have dropped like a rock recently which has made a 3D printer an affordable hi-tech toy/tool for just about anyone.  Just $200 US will allow you to start on your 3D printing journey.  

The first decision you need to make on your 3D printer purchase is which technology do you want to use?  FDM or SLA?  

FDM stands for Fused Deposition Modeling and this technology uses spools of thin plastic filament that is melted to form the 3D object.  

SLA stands for Stereolithography Apparatus, and this technology uses a bath of liquid resin and UV light to create the 3D objects.  SLA printing involves lots of chemicals and sticky resin, so I went the FDM route.

The Printer


The most common 3D printers used by cookie cutter enthusiast are:
  • Alta by Silhouette - The Alta is designed for beginners.  It comes preassembled and calibrated so you just take it out of the box, plug it in, and you can start printing.  All the design, modeling, and slicer steps are combined into one Silhouette software package.  It is easy peasy.  BUT - the largest cutter you can print is just under 4".  I actually considered getting this printer till I noticed the bed size limitation.
  • ANYCUBE Photon is another 3D printer that comes fully assembled, but this brand uses the SLA technology and liquid resin.
  • Creality - The Creality printers are widely used by both beginner 3D enthusiast and large scale printer farms. The Ender 3 series is at the lower end of the price spectrum but still reliable.  There are tons of different models and versions starting with the Ender 3, Ender 3 Pro and the Ender 3 Version 2 (which is the one I ended up buying).  The Enders have a bed size of 220 mm square, which is an impressive 8.66 inches.  At this size you can print several cookie cutters at once.  The only gotcha with this printer is that it has to be assembled, and I mean REALLY assembled: bolts, screws, pulleys, wiring, power supply - EVERYTHING.  If this scares you - don't get an Ender 3.   (Update:  Creality has released the Ender 3 Max, which is the Ender 3 V2 with a few upgrades and an larger 300mm /11.8" bed.)    ***   Creality also sells the CR series  which has a 300 mm bed and lots of upgrades over the Ender series. The latest version the CR-10S Pro V2 also boasts Auto Bed Leveling.  The CR-10S Pro V2 is almost twice as much as the Ender series, but knowing what I know now, I should have ponied up the extra $300 and gotten the CR-10S.  Manually leveling the bed involves placing a piece of paper between the nozzle and and bed and tightening the corner leveling knobs until the two just kiss.  You have to do this at each corner and when you finish all four corners you need to got around again, and then again to make sure everything is level.  It is a royal PITB.  So if you can afford it, get a 3D printer with auto leveling. 
  • Dremel - Dremel has the 3D20 printer that comes preassembled with a 9 x 5.5 inch bed size.  The printer is fully enclosed so there are less issues with noise and dust.  BUT the Dremel uses a .G3DREM file instead of the typical .GCODE file.  This is not a big deal except you can't use the more popular Slicer software programs like Cura and Prusa (more about that later).  Dremel has its own slicer software that you would use to convert the .STL file (which describes the geometry of your cutter) to .G3DREM (which tells the 3D printer what to do).  The Dremel is also limited to PLA filament (more on that later); the nozzle doesn't get hot enough to melt PETG and ABS filament.
  • FlashForge has an extensive line of 3D printers.  I don't know anything about them, but they get mentioned a lot.
  • Makerbot is another widely used brand but is a higher end (ie expensive) printer.
  • Monoprice Mini Delta is similar in size and shape to the Silhouette Alta.  The Mini Delta comes fully assembled, it is all enclosed, it has auto-leveling, a 4.3" bed plate, and it reaches temperatures high enough to melt ABS filament.  It also has a Wi-Fi connection.  The specs and low price (~ $180) makes this look like a viable option for making small cookie cutters, but it has gotten mixed reviews.
  • Prusa - The Prusa 3D printer is another brand used widely by cookie cutter enthusiast.  It is a little more expensive than the Enders, but it is a lot more glitzy and feature packed.  It also has that holy grail: Auto Bed Leveling.  When I first considered buying a 3D printer Prusa had just released the Prusa Mini.  (The mini has a bed size of  180 mm or 7 inches.)  I seriously considered buying this machine but there was a n 8 week wait for delivery.  I said no to the wait and bought the Creality Ender instead.    FYI:  Here is a video that gives an interesting look inside the Prusa factory.  
  • Ultimaker is another high end production 3D printer, but the Ultimaker 2 will set you back almost 3K.  Ultimaker also distributes the wildly popular (and free) Cura Slicer program which can be used with most 3D printers.   

Features to look for in a 3D Printer used to make cookie cutters 
  • Nozzle 
    • Size - The 0.4mm nozzle is the most common size.  It is the best of both worlds in that it gives good details but also prints at acceptable speeds.  With the .4mm nozzle you can print down to layer heights of just 0.1mm or up to 0.3mm.  The thinner the layer height, the better the detail (on the Z axis), and the thicker the layer height the fast you will print.  Other common nozzle sizes are .25mm and .2mm, but if you need/want a smaller nozzle check to make sure your 3D machine can handle it. 
    • Food Safety - If you plan on making cookie cutter for sale to the public, you might want to invest in a stainless steel plated nozzle.  Most 3D printers come with a brass nozzle which isn't considered food safe because it might contain lead.  But be aware if you change to stainless steel you may have to increase the temperature of your nozzle to compensate.
  • Bed Plate Size  
    • Bed plate size is one of the biggest consideration when selecting your printer.  The bigger the bed, the more cookie cutters you can print at one time.  Also be aware that you won't be able to print right to the edge of the bed.  Some printers have clips that hold the bed in place so that will reduce some of the usable bed space.  A "skirt" and "brim" is also commonly extruded around the area where the cutter will be printed, and this will also reduce your usable bed space.  The skirt primes the nozzle and gets a good flow going before the actual cutter is started.  The "brim" is like a levee/dam around your cutter that will stop cold drafts of air from hitting the nozzle and cooling the melted filament prematurely.   So watch out for printers that have a really small bed.  A 4" bed might sound okay when you are shopping, but it might actually be limited to a 3.5" cutter. 
    • What material is the bed plate made from?  Printers can come with rubber, metal, magnetic, or glass beds.  You want a bed that is perfectly flat: no dips, waves or divots on the surface.  You also want it made from material that won't warp or deform over time because a warped bed plate will generate a deformed cookie cutter.  The build plate also needs to have adhesive properties so the extruded plastic has something to stick too.  If the plastic doesn't stick to the bed plate your cookie cutter will end up being a big clump of spaghetti instead of a blade and handle.   My ender came with a glass bed, but glass beds sometime need extra adhesive such as a glue stick, painter's tape, or Aqua Net hairspray.  (Note: if using hair spray remove the plate and spray it away from the printer, you don't want the sticky hairspray getting onto the components of your printer.)
  • Maximum  Extruder Temperature - Some printers have a maximum extruder temperature that will limit the type of filament you can use.  If the printer can only reach 230 degrees C than it can only use PLA filament.  You won't be able to use PETG or ABS filament (if you wanted too).  See section below on filament types.
  •  Z-axis height - The maximum Z-axis height is important if you also want to print tall figures with your 3D printer, but because cookie cutter are so short (around 19mm tall) is not really a consideration.
  • Heated Bed - A heated bed helps the filament stick to the printing bed.  A heated bed it required for some types of filament (ABS) and just optional for other types of filament (PLA).  But it is HUGE problem getting filament to stick to the bed, so opt for the heated bed if you can afford it.
  • Auto Leveling - Auto leveling is nice but not required.  Manually leveling the bed involves placing a piece of paper between the nozzle and and bed and tightening the corner leveling knobs until the two just kiss.  You have to do this at each corner and when you finish all four corners you need to got around again, and then again to make sure everything is level.  So it would be nice if the printer did this leveling for you, but it is not a requirement.
  • Noise / Safety - Some printers are noisy, very very noisy.  There are motors and fans and belts constantly whizzing back and forth.  If noise is an issue you may want to look for a printer that comes with an enclosure.  Printers also generate micro shards of plastic as the filament is heated and cooled so place the printer in a well ventilated area.  And DON'T put food or eat around the running printer - you don't want the micro plastics getting onto your food and ending up in your digestive system or your lungs.  You can buy an enclosure for your Ender 3 printer, but on warm days all the moving parts can cause the air inside the enclosure to heat up rapidly.  If using ABS filament you will need a ventilation system because of the toxic fumes the ABS releases as it is heated.
  • Ethernet connection - Most 3D Printers read the .GCODE data files from a micro SD card, and it is a pain to constantly move the SD card from your computer (where you are generating the .GCODE file) to the printer (which reads the file on the SD card and prints the object).  Some printers allow you to hook the printer to the computer via a micro USB cable but this can be problematic.   If you intend on printing cookie cutters for sale, you might want to find a printer that will work via an Ethernet connection.  

Filament
  • FDM printers typically use PLA, PLA Plus/PRO, PETT, PETG, or ABS filament.  Some FDM printers can handle nylon, PVA, TPU, and blends mixed with wood, ceramics, and metal fibers.  FYI: Virgin filament uses no recycled plastics.
    • PLA (polylactic acid) is the most commonly use filament for printing cookie cutters.   PLA is a bio-degradable type of plastic that is made from corn starch or sugar came (it also contains additives and pigments).  It is called "the green plastic", and it is considered food safe.   PLA comes in a rainbow of colors including translucent, and Silky.    It melts at a temperature range of 195-210 degrees Centigrade, and a heat bed is useful but not required.  A heated bed helps the first layers of the cookie cutter stick to the bed.  If the cutter doesn't stick, a mess of filament is created and the cutter is ruined.  
    • PLA Plus also called PLA + or PLA Pro is essentially PLA was some additional additives that make it silkier, stronger, less brittle, or more colorful.  The extra additives mixed with the PLA is typically trade/company secrets.    
    • PETT - PETT is halfway between PLA and PETG as far as strength and flexibility.  It has a temperature range of 212 and 224 degrees C.  Some articles tout it as being FDA approved, but others articles it is made up of FDA materials (just like PLA).  PETT easily sticks to a heated bed plate.  PETT is also about twice as much as PLA.
    • PETG - PETG stands for "Polyethylene terphthalate glycol-modified".  It has a lot of the same properties as PLA (considered food safe and easy to work with) but it is more expensive.  PETG requires a higher temperature to melt (235-265 degrees C), but it is also stronger and more impact resistant (less brittle).   But check the specs on the 3D printer - some printers can't achieve a temperature high enough to use the PETG filament.
    • ABS - ABS which stands for Acrylonitrile butadiene styrene is an oil-based thermoplasic.  ABS has superiors properties of strength and flexibility to PLA but ABS requires a heated bed because it tends to warp when printing.  ABS also needs ventilation when printing because of the noxious fumes it emits.  PLA on the other hand has a pleasing cotton candy scent (maybe because it is made from sugar cane?) 
  • Whichever type of filament you use, it comes in tightly wound roll typically weighing 1 kg (2.2 lbs).  The rolls come in vacuum sealed bags to protect it from humidity.  Humidity is the enemy of filament.  Humidity can cause the filament to become sticky when it is heated which clogs the nozzle.  Damp filament can also cause bubble, bumps, and pimples to form on your finished cookie cutters.  When not in use the filament should be protected from humidity.   You can also use a filament dryer box which is like a mini dehydrator for your filament.  FYI: From a 1 kg roll I can get about 200 cookie cutters!  That works out to about 10 to 15 cents each in filament costs for each cutter (depending on how much you pay for a roll of filament of course).  FYI2:  The Slicer software will tell you how much filament a cookie cutter will use and from that you can calculate an exact cost.
  • There are two standard filament sizes: 1.75 and 2.85 mm.  1.75 mm is the most commonly used size for printing cookie cutters.
  • You should also look for the labeled Dimensional Accuracy when purchasing filament.  This number indicates how much the filament varies from the expected size.  Common accuracy measurements are +/-.05 to +/- .02.   The larger the variance in the filament size the greater the chance that it will clog the nozzle.  Look for accuracy in the .02 to .03 range.

Design Software

If you are the artist type you probably already know about the various software packages you can use to draw your art.  Adobe Illustrator dominates the field but CorelDraw Essentials is a less costly alternative and Inkspace is free.  

If you don't have an artistic bone in your body (like me), you can just find clip-art/graphics on the internet and use those.  Just keep copyright laws in mind if you plan on selling any of your cookie cutters.   Clip-art that you download might also need to be tweaked to work better as a cutter.  For this I use PhotoShop Elements.  With PhotoShop Elements you can move parts around, extend some things, reduce others, or join parts to make the shape continuous.   I had to do a little Photoshop editing to make this letter "R" work as a gum paste/fondant cutter.  I had to join the two separate parts of the letter to make it one piece.  With Elements I quickly went from the true type font on the left to the gum paste cutter on the right.


CAUTION! REMEMBER THIS!    -  Did I get your attention?  Remember when you design your cookie cutter, you need to flip your design horizontally before you starting building the 3D components.  It is weird but the top surface of the cookie cutter handle is printed first and the sharpest point of the blade is printed last.  Because of this, the image needs to be flipped horizontally when you're building it in 3D space.  If you don't flip it before building the 3D image, your cookie cutter (and your dough) will be backwards.  Sometimes this doesn't matter, but for cutters like the letter above - it is vitally important.   I can't tell you how many times I've forgotten to flip my image, and windup with a backwards cookie cutter.  


3D Modeling Software

So you have your 3D printer, your filament, and your clip art - so what's next?   At this point you need to turn your line drawing into a 3D model.  In cookie cutter terms you need to turn your line drawing into a blade and a cutting handle.   

When modeling your cookie cutter you need to think of sizes/dimensions.  The easy question is how large do you want your cutter? 3 inches, 3.5 inches, 4 inches? But beyond that you have to think about the width and depth of your handle and the width and depth of your cutting blade.  Also, do you want and extra support blade?  3D printed cookie cutters aren't as strong as metal cutters so the cutting edge needs to be thicker, but a thicker cutting blade doesn't cut the dough as well.  A workaround is to have two blades on your 3D printed cookie cutter.  You have a longer, thinner cutting blade, and stuck to it you have another blade that is slightly shorter.  The shorter blade gives support to the main blade but doesn't interfere with the cut.  And if you  really want to get fancy with your cutters you can bevel the edges of the handle, emboss the name of the cutter onto the side of the blade, or emboss the top of the handle.  The sky is the limit when you are designing your own cutters.


So where does all the modeling magic happen?  It happens in the 3D Modeling Software...
  • CookieCad.com  -The easiest way to turn your clip art into a 3D model is with the free CookieCad App.   You upload your drawing to the web site, enter a few parameters (or use their defaults), and in 5 seconds flat the app generates your 3D model that you can then download to your computer as a .STL file.  If you are new to 3D modeling, this is THE WAY TO GO.  The app is not perfect, but it will give you a 3D modeled cookie cutter 90% of the time.  If you want the other 10% you will need to learn some 3D modeling software.  And if you don't have a 3D printer but need a custom cutter they can do that to.  Just upload your clip art and they will 3D print and mail the cutter directly to you.  PS:  Cookiecad is nice enough to FLIP your image automatically so you don't have to remember to do it.
  • TinkerCad - I haven't had time to play around with TinkerCad, but a lot of people use it.
  • Fusion 360 - AutoDesk's Fusion 360 dominates the 3D modeling world.  The software has a hefty price tag, but if your are a hobbyist you can use the software free for a year.  Fusion is also the most frustrating and non-intuitive software I have every used.  Nothing works like you think it should and it takes 10 steps to do what should take one.  For example say your want to shrink /enlarge your sketch to be 4".  Simple right?? Forget about it!  You need to do this cryptic scaling of the sketch.  Fusion 360 has an add-on, named Bella, that you can buy to make the cookie cutter building process much simpler.  But I like to punish myself, so I do it all manually.  And I have to admit that once you learn the cryptic Fusion 360 process, you can outline your sketch and generate your .STL files in about 5 minutes.
So regardless of the 3D Modeling software you use, the end result is a 3D model that is saved in the STL file format - with the file extension .STL.  You can also electronically buy cookie cutters that are emailed to you in the .STL format.  The files have all the modeling done for you and all you need to do is "slice" the .STL file and transfer the resulting .GCODE file to your 3D printer for printing.


Slicer Software

There are many Slicer software programs available, but the field is dominated by Cura and Prusa.  
  • Cura - Ultimaker puts out the Cura Slicer and it will work with most 3D printers  It is free to download and use.
  • Prusa - Prusa puts out the Prusa Slicer.  There are default profiles for Prusa and Creality 3D printers, but you can build your own profile for other 3D printers.  Like Cura, Prusa Slicer is free to download and use. 
  • Creality - Creality offers a bare-bones slicer named Creality Slicer.  It is a striped down version of Cura. Free download.
  • Simplify3D - One of the only slicer programs that you have to buy.  I haven't tried it because I'm cheap.
  • Dremel DigLab 3D slicer - Slicer for Dremel printers only, based on the Cura slicer.
All the slicers work essentially the same.  You import your .STL file into the slicer program, fiddle with some of the parameters, hit the "Slice" button, and the Slicer generate a .GCODE file.  The .GCODE file is typically saved to a micro SD card, which is then inserted into the 3D printer for the printing of the cookie cutter.  

What makes the different slicer programs unique is the parameters you can fiddle with.  Things like Layer Height, Infill, Speed, Temperature, Skirt, Brim, the list goes on and on and on.  If you like to experiment you can change the settings and see how it effects your print.  Below is the grave yard of my experimenting.  





Printing

The fun (and the problems) start once you have your printer specific .GCODE file loaded into your printer.  I was one of the lucky ones and my printer worked flawlessly from the first print.  I am on a few Facebook 3D printing groups, and it is a little frightening how many things can go wrong.



The Most Common Issue with 3D Printing....

Simplify3D has an excellent summary of the most common issues you can have with 3D printing, but some of the problems I have run into include:

  • Not Sticking to the Bed - I have a heated glass bed on my Ender and in the beginning my KODAK filament wouldn't stick to the bed.  The entire cookie cutter would slide around with the nozzle as it moved. I finally started using an Elmer's Purple Glue Stick.  Before printing I will apply a thin film to the glass bed.  After a few prints I start getting a buildup of old glue, so I remove the glass bed and wash it with warm water. But according to Simplify3D's troubleshooting guide there are 6 or 7 other things you can check if your print is not sticking to the bed including a non-level bed, the nozzle being too far away from the print bed, temperature settings, fan setting, etc.  They also say that different brands of filament stick better or certain bed material.  The sample of Creality filament that came with my Ender stuck fine to the glass bed, but the KODAK green filament had problems from day one (hence the need for the glue stick).  So maybe it is true that some brands of filament just stick better than others.
  • Warping - I was getting warped edges on the sharp corners of my cookies cutters.  The edge would lift off the printing bed and interfere with the movement of the nozzle.  Putting extra glue in the trouble areas seemed to reduce the problem, but the problem went away completely when I switched to the Prusa slicer and CHEP's profile.  (CHEP is one of the YouTube 3D printing gurus.) The CHEP profile keeps the cooling fan turned off for the first few slices of the print.  Turning off the fan keeps the filament from cooling too quickly on the critical first layers.
  • Under Extrusion - When I switched to the Prusa slicer I was getting under extrusion on my base layer (which is the handle of the cookie cutter).  No matter how I fiddled with the parameters I couldn't fix it, but then I found the CHEP profile which gave me the perfect setting and now my handles look beautiful.
  • Stringing  - In the beginning I was getting a lot of stringing.  Things that can cause this are retraction speed, temperature too high, long movements over open spaces, movement speed.  Bumping up the nozzle temperature up by 5 degrees seemed to fix this problem.
  • Layer Separation and Splitting - In the beginning a few of my cookie cutters just split apart.  Apparently this is caused by the Layer Height being too large or the temperature being too low.  The problem went away when I increased the temperature.
The above list is just a sampling of the problems that can go wrong with your prints.  Most of these problems can be fixed by changing parameters in the printing profile, but there are other problems that are machine specific.  Things like a warped bed or loose belts, clogged nozzle or stripped gears.  Some people even strip down their machines once a month for cleaning and maintenance, at a minimum you should periodically check that all the bolts and screws are still tight and nothing is accumulating dust and filament debris.

Of all the steps involved in making a 3D printed cookie cutter, the functioning of the printer, and its reliance on the Slicer, is the most problematic and frustrating.  Designing the cutter and making the 3D model is the easy (and fun) part.  Trying to print a cutter without flaws is the hard part.  But if the cutter is just for your personal use it doesn't matter if the side of the cutter has some pimples on it or the top of the handle isn't perfectly smooth.  I can cut off the pimples and pull off the string.  (PS: These problems went away when I increased the temp of my nozzle by 5 degrees.)  


Not sure what is suddenly causing the top of the handle to look like this!  Is related to a setting in the Slicer?  Maybe my printing bed needs to be releveled? Or maybe my nozzle is too far way from my printing bed, or maybe a belt is loose?   The point is when something goes wrong there might be several things you need to look at to fix the problem.  And no I haven't fixed the problem...



 


Food Safety 

The final topic of discussion needs to be about the Food Safety of 3D Printed cookie cutters.  The food safety of PLA filament and 3D printed objects in general is a hotly debated issue.  Some say the cookie cutters are safe, and others say absolutely not.  I take the middle road: the cutters are not 100% food safe but if you limit the contact with food, then any risk is also limited. 

  • First question is: is the PLA filament itself food safe?  The filament is made from corn starch or sugar came (which is food safe), but it also contains additives and pigments that are potentially not food safe.  There are PLA manufactures that actually label their productions as Food Safe including German RepRap's PP Plastic and FormFutura's HDglass.
  • Are the printer's components food safe?  Is the nozzle made from stainless steel?  What about the adhesive you are using to get the cutter to stick to the bed plate?
  • PLA cutters will warp when exposed to heat so they can't be placed in hot water or in the dishwasher.  Remember that PLA melts at 195 degrees C/ 383 degrees F, so even very hot water will soften and warp the cutter.   Because of this low tolerance to heat, you can't use the typical sterilization method of dunking the cutter in hot water.   Instead you need to use a lukewarm  bath or an anti-bacterial solution to wash the cutter after it is made and before it is used.
  • Another concern is that while the cutter looks solid, it is not. There are small crevices and tiny gaps in the surface of the cutter that is very hard to thoroughly clean (especially since you can't use hot water).  The small crevices allow bacteria to quickly build up.  
  • Some "people" says that 3D printed cookie cutters are only safe for Single Use.  After using them to cut out a batch of cookie dough, the cutter should be thrown away.  This is because after coming in contact with dough (which usually contain raw eggs)  the porous surface of the cookie cutter becomes a petri dish of multiplying bacteria.  
  • Other "people" say that using a 3D printed cookie cutter is safe because the cutter is not in contact with the cookie dough for very long, and the cookie itself is baked which will kill off any bacteria transferred to the cookie dough via the cutter.  The heat of the oven might solve the bacteria problem with cookies, but what about fondant?  I cut fondant and gum paste with my cookie cutters too.  That also brings up the subject of Stencils used on cookies.  Like the PLA the stencil plastic itself is food safe, but what other bacteria are lurking on the plastic stencil? And paper!  I use paper templets as a guide when cutting cakes - is paper food safe?

If you let it, all the different "what ifs" will drive you crazy.  To be safe after the cutter is made I wash it in lukewarm water with a mild antibacterial soap.  This will remove any plastic microfibers and any glue residue.  Before I use the cutter, I wash it again.  And after I use it, I throw it away (an average cutter only cost about 15 cents in filament to make).  I have the .STL and .GCODE files so I can print another if I happen to need it again - which doesn't happen very often.  

If I'm using the cutter on fondant, I cover the fondant with plastic wrap which creates a barrier between the fondant and the cutter.  As an added bonus the plastic wrap give the edge of the fondant a nice rounded look.  Win-win.


Conclusion 

So in the beginning I said that printing 3D cookie cutters was SO easy.  Well it isn't really all that easy.  Between the modeling, the slicer, and the printer itself - so MANY things can go wrong.  But if you are the adventurous type that likes to filled with machinery and software, then this is the perfect hobby for you.

Monogrammed Floral & Leaf Flourish Cookies

I made these monogrammed cookies to test out a set of cookie cutters that I purchased and never got to use.  The cutters were for a baby shower with a "greenery" theme.  The party got canceled due to State mandated lock-downs - damn you Covid-19! 


The cutters came from an Etsy shop called Bobbi's Cutters.  The banner cutter is called Andy Kay's Leaf Flourish Banner, and the other two cutters are called Leaf Flourish #1 and Leaf Flourish #2.  The #2 is a 2.5" cookie, but it was a little on the small side so I might buy the 3.0" to add to the collection.

I don't like royal icing (yuck), so the cookies are iced using Toba Garrette's glace recipe.  The glace is runnier and more difficult to work with than royal icing, but the glace dries semi-hard and shiny and it doesn't chip teeth when you bite into it - always a plus.

For the monogram I used FMM's Upper Cake Funky Alphabet Tappit Cutters, and I painted them with edible gold luster dust mixed with Everclear.  I could have pipped the letter onto the cookie, but I didn't feel like mixing up a batch of royal icing - I'm so lazy sometimes.  I also didn't feel like setting up my mini projector just for a few cookies.  I suck at lettering on cookies so I never do it freehand.  I always project the text onto the cookie and use the projected image as a guide.  My Pico (what mini projectors are called), is one of my favorite tools.

For the flowers I again took the lazy route.  Instead of piping them from royal icing, I just cut the flowers from Bright White Choco Pan Modeling Chocolate that I tinted a Creamy Peach color.  I used a Hydrangea cutter and veiner, and I dusted the petals with a little pink powder food color to give them some depth.   A gold sugar pearl was used for the center, and I also sprinkled edible gold glitter flakes on the cookies to give them added sparkle.


So I was happy with the cookies, but my FaceBook followers (ie my family) weren't too impressed.  I'm not sure why; I thought they were pretty.

Galaxy Fortnite Cake with Loot Llama and Switch Controller

This is the second Fortnite Cake I made in the last few months.  This one was for my next door neighbor's grandson.

The Loot Llama is a Funko Pop plastic toy, but the rest of the items are made from fondant and gum paste.

Making the Switch controller was a snap.  I cut out a piece of cardboard to match a printout of the controller, and then wrapped a thin piece of black gum paste around the center of the cardboard.


I wrapped red gum paste around one end and blue around the other.


I used some tiny circle cutters to cut out the "buttons" for the controller, and trimmed the edges with blue, red, and black strips of gum paste.


For the screen image on the controller I just cut out a regular printed image (not an edible image), glued the printout to a piece of black gum paste using a dot runner (note: I prefer the "dot runner" over the "glue runner" the glue runner is a little messy), and then used the same dot runner to stick the gum paste backed image to the gum paste controller.


Here is the finished controller.  I put the X,Y,A & B on the buttons with a white edible marker.



The tree is just globs of greenish fondant rolled out into tear-drop shapes and stuck to an aluminium foil tree.



The Drop Box is six panels stuck to an aluminium foil shaped cube.



Making the "Galaxy" like colors on the cake itself was also a first.  I started with a white base.  Note, I use CakeSafe acrylic rounds to get my sides perfectly straight and the edges very sharp.  I have a blog post on it here.


Added some dollops of electric purple, electric pink, and sky blue buttercream.


Scrape and smeared the colors.


Added some black buttercream.


And scraped and smeared them all together.


The lettering I cut out by hand using a paper templet.


 And then I stuck the letters to a cutout of the Fortnite logo which was also made from gum paste.  I placed the white logo on a foam cake dummy so it would dry/harden in the curved shape.


The final touches on the galaxy cake were some edible silver stars and sugar pearls to give it a more spacey feel.  Some purple and blue sugar rock, Whopper candies, and some Oreo truffles I had hanging around my kitchen were also scattered around the cake.  At the last minute I also made some ear buds out of fondant.  I think the red and blue strings tie the top and bottom of the cake together.



I hope Jaxsen likes it.

Bee Keeper Groom's Cake

My cousin, Randy, is a avid bee keeper.  He even has his own line of bottled honey - Casa Fernandez.  So for his wedding day, the bride-to-be asked me to surprise him with a Bee Keeper themed cake.  This is what I came up with....

The cake is an 11"x 9" chocolate cake that I covered in chocolate ganache.  For the wood gain look of the sides I just tinted white Renshaw fondant with a little Ivory and Warm Brown gel color; mixing the colors till they gave a marbled color pattern.  I rolled out the fondant and then pressed a Woodgrain fondant impression mat into the fondant to give the pattern.  Next I cut 1-1/2" strips using a Wilton strip cutter, and then positioned the strips on the cake.  After all the strips were in place, I dusted the textured fondant with powder food color in yellow, brown, and black.   The color dusting gives the fondant "wood" a much more realistic look.


Beside the main bee box, the cake had a few other accent pieces.  The first thing I made was a hive tray that would sit on top of the cake and made to look like it was being pulled from the box. For the honeycomb section I used gum paste tinted with buttercup yellow food gel and a honeycomb impression mat.  I trimmed the sides and top of the honeycomb will strips of the wood-grain fondant that I stiffened with Tylose Powder, and embedded two wooded skewers into the sides to hold the tray upright on the cake.


I made the "Bee Smoker" out of white Wilton gum paste.  (Don't use Satin Ice gum paste because it doesn't harden like the Wilton or Hobby Lobby brand.) The body of the smoker is just a rectangular piece of gum paste that I formed around a glass bottle.  For the top section I wrapped another rectangular piece of gum paste around a funnel.  For the curved handle I just formed the curly piece and allowed it to dry on its side.  Once all the pieces were dry, I painted them with black food color gel mixed with Everclear.  Once the black base coat was dry, I painted it again with a mixture of edible silver colored food power mixed with Everclear.   When all the paint was dry, I stuck the pieces together using melt chocolate.  The final touch to the smoker was the puffs of wispy cotton-ball smoke coming out of the top.  (Doesn't the smoker remind you of the Tin Man from the Wizard of Oz?)


For the honeycomb pieces I used gum pasted tinted with buttercup yellow food gel and a honeycomb impression mat. The little honey jar is glass OUI yoguart container filled with melted yellow candy melts mixed with a little heavy cream to make it flow.


The little bees are made with a teardrop shaped glob of buttercup yellow gum paste, 20 gauge black wire for the antenna and stinger, and wafer paper for the wings.  To elevate the flying bees I used a 20 gauge silver wire, but I should have used something thicker because the weight of the bees was too much for the wire and the wire kept bending over.



So this was a unique cake to make.  I hope my cousin likes it.

Comparison of CopyCat Levain Chocolate Chip Cookie Recipes

I don't know why there has been an explosion YouTube masters trying to break the secret of the Levain Chunky Chocolate Chip Cookie Recipe, but the explosion has been interesting to watch.  I had never heard of Levain and their famous cookie until a Cupcake Jemma video popped up on my feed.



First Jemma and her gang went to New York City and raved over the Levain cookie.  Here is the November 7, 2019, video.  Then once back at the Crumbs and Doilies Bakery (C&D) in the UK, Sally & Dane (Jemma was sick) got to work trying to duplicate the recipe.  Here is the November 21, 2019, video.

A few days after the Cupcake Jemma video, on November 26, 2019, another video on the same Levain Cookie popped up.  This video was by Delish.

What in the heck is going on????

A quick search of YouTube found a video by the real Levain owners/bakers making their famous cookies.  This one from July 17, 2008.  More searching found countless other videos claiming to have broken the Levain code to the perfect chunky chocolate chip cookie. Ally Bakes on November 2, 2019Daram Table on Sept 6, 2019,  William's Kitchen on Aug 6, 2019,   Serious Eats on April 23, 2019,  Maverick Baking on November 4, 2018, etc, etc.  The more you look, the more you find.

All this hype convinced me to give the copycat recipes a try.  First up I tried the Cupcake Jemma recipe, because Jemma, Sally, and Dane are my heroes.  Here is their version straight out of the oven.

Mixing up a batch of Jemma's cookie dough was a breeze.  The C&D gang repeatedly stressed not to over mix the dough, and the end result was a magnificent looking batch of cookies.  But I'm sad to admit that I wasn't impressed with the taste.  Something was missing.  I much preferred the taste of my goto Mock Mrs. Fields Cookie recipe which contains pulverized oatmeal (I use Quaker Quick 1 Minute Oats).  But I have to admit that while my MMF cookies taste great they look a little flat when compared to the Cupcake Jemma cookie.  In an Aha moment I decided to use Cupcake Jemma's mixing technique on the MMF Cookie and got what I think is an awesome chunky cookie.



What do you think?  Crispy on the outside, soft, gooey, and oozing chocolate on the inside.  Chunky, chocolate chip cookie nirvana.


I put all thoughts of Levain cookies aside until Joshua Weissman's video on Feb 27, 2020 hit my notifications list.  His recipe intrigued me because it used melted butter instead of cold butter.  His recipe isn't truly in the Levain style, but because it WAS a little different I decided to give it a try.  And because his recipe uses melted butter I decided to kick it up a notch and use melted browned butter instead.  Yummm...


After baking each recipe individually I decided to make them all at once and taste them in a head-to-head comparison.  Here is the dough going into the oven.  Cupcake Jemma on the left, Josh (melted butter recipe) in the center, and the Mock Mrs. Field (oatmeal flour) on the right.  Look at the shadows the cookies are throwing.  That shows that they are really tall.  (Note: for all the cookies I used Callebaut Chocolate Callets 54.5% Cacao, Nielsen-Massey Vanilla Bean Paste, and Gold Medal Flour.  The flour and chocolate you use will greatly impact the taste and texture of the cookies.)


Same cookies right out of the oven.  Cupcake Jemma (left), Joshua W (center), and Mock Mrs. Fields (right).  The cookie dough balls all weigh approximately 110g, and I baked them in a 350 degree convection oven for 18 minutes.  As per the Cupcake Jemma instructions, I also pre-heated the pan which stops the cookie dough from spreading as it bakes and gives them a brown, crispy bottom.  Here they are after baking - there was very little spreading.


All the cookies baked up nice and tall, but the Cupcake Jemma (A)  is the tallest, and the Mock Mrs. Fields (C) is the flattest.


Here are the cookies after about 30 minutes of cooling.



And here they are showing their soft, gooey centers.  Cupcake Jemma on the left, Joshus W. in the center, and Mock Mrs Field on the left.



Taste-wise my favorites were the Mock Mrs Fields and the Joshua Weismann melted butter recipe.

Here are my observations:

Cupcake Jemma Recipe - I liked the chunky look of the cookie.  It had lots of deep nooks and crannies that made it look very appetizing.  It was the tallest of the three cookie recipes, and it had the lightest bottom.  The interior texture looked slightly more cake-like than the other two cookies - it had a noticeable crumb.  The inside of the cookie was nice and soft, and the outside had just a little crunch.  But sadly I found the Cupcake Jemma cookie a little lacking in flavor.  It just tasted a little flat.  Maybe it needed some salt and vanilla added to the mix.  After letting the cookie sit for 24 hours the inside was still soft and moist, and surprisingly the flavor of the cookie had improved noticeably.  Letting it rest deepened the chocolate flavor and gave it a wonderful taste.




Joshua Weismann Recipe - This cookie, which was made with melted butter, had a much creamier texture than the other two cookies.  Both the exterior and interior looked smooth and velvety.  When the cookie was broken open, some 30 minutes after coming out of the over, the interior looked almost gooey.  There was no "crumb" to this cookie, it almost looked like fudge.  The bottom of the cookie was a little hard and over caramelized, but the top was a beautiful golden brown.  And the taste - the taste was amazing.  It was bold and unique.  I was blown away.  I've always loved the Mock Mrs. Field recipe, but this cookie might become my new favorite.  After 24 hours of resting, the gooey interior of the cookie had solidified, but it was still soft and moist.




Mock Mrs. Field (MMF) Recipe - The outside of this cookie is super crunchy, and the inside is very soft and moist.  The cookie's texture has a little hint of a crumb but not much.  The oatmeal powder and the grated chocolate also give the cookie a different look.  After baking you can still see flecks of the white oatmeal, and the grated chocolate gives the cookie an overall browner look.  It doesn't look like a Chocolate Chocolate Chip Cookies, but the MMF doesn't look as golden brown as the other two cookies.  Taste-wise the MMF is a winner.  It is super moist  and the grated chocolate give it an extra kick of flavor.  24 hours later this cookie is still super moist.  The pulverized oatmeal absorbs moisture and helps the cookie stay fresher longer.




So which is my favorite?  It is a toss-up between the Mock Mrs. Field and the Joshua Weismann (with the browned butter).  Both are really, really good but in different ways.  And to further complicate things - I really liked the Cupcake Jemma cookie after it had set for a while.  Straight from the oven the other two were better, but after 24 hours all three were awesome.

With the Covid-19 "stay-at-home" orders still in place I can't have a big gathering to get a bunch of different opinions on the cookies, but I'm going to drop a few of the samples off to my family to see which cookie is their favorite.  Stay tuned for the results....

Well the results are in and (sadly) there is still no clear winner.  The Joshua Weismann (JW) recipe was neck-in-neck with the Cupcake Jemma (CCJ) , and the Mock Mrs. Fields (MMF) was not far behind.  The level of sweetness seemed to be the deciding factor.  The people that like the Cupcake Jemma liked it because it wasn't as sweet, they favored the JW recipe next, and they didn't like the MMF because it was too sweet and had too much chocolate.  For the people that like the MMF, they liked it because it was sweet and had lots of chocolate, and they didn't like the CCJ (as much) because it wasn't sweet enough.  The people that preferred the Joshua cookie said it had unique flavor and thought the CCJ was "missing something".

So I'm not sure where to go next with this experiment.  I might try making browned butter, getting it cold again, and using that in the CupCake Jemma recipe.  I also saw yesterday that the DoubleTree / Hilton Hotel chain published it's chocolate chip cookie recipe.  Their recipe has oats like the MMF, but it also has lemon juice and a pinch of cinnamon.  I might have to give that recipe a try....

Each cookie was 110-125g of dough, and I baked them in a 350 degree convection oven for 17-18 minutes on a pre-heated baking sheet.  After removing the cookies from the oven I let them rest for 3 minutes on the baking sheet before transferring them to a cooling rack.
